From Chicago to Spain: The Next Chapter of Nouvie’s Growth

When we first started Nouvie, we weren’t trying to create “just another” non-alcoholic beverage.
We were trying to create something we genuinely wished existed at the table.
As two women building a company rooted in hospitality, inclusion, and celebration, we wanted a non-alcoholic sparkling wine that still felt sophisticated. Something crisp, elegant, low sugar, low calorie, and most importantly, something that actually tasted like wine.
What started as an idea has now grown into something much bigger than we could have imagined.
Over the last year, Nouvie has continued expanding across both on-premise and off-premise accounts throughout Chicago and beyond. From restaurants and hotels to bottle shops and specialty retailers, we’ve watched more consumers actively seek out elevated non-alcoholic options that fit into the way they want to live, celebrate, and connect.
At the same time, we’ve continued growing the brand itself with the introduction of our new Sparkling Viognier from Mendocino County, California. Expanding into California fruit and production has been an exciting next step for us as we continue building a portfolio rooted in quality wine regions and thoughtful craftsmanship.
Seeing Nouvie on wine lists, at chef dinners, wellness events, galas, and inside retail stores has been incredibly surreal.
We’ve had the opportunity to partner with some amazing hospitality groups, restaurants, and events while continuing to grow our presence in independent retail. What’s been most exciting is seeing how many people are no longer looking at non-alcoholic wine as an “alternative,” but as part of a more intentional and balanced lifestyle.
That shift is happening everywhere.
Consumers want options. Restaurants want sophisticated non-alcoholic programs. Retailers want products that feel premium and modern. People still want the ritual of a toast, a dinner pairing, or a celebratory pour, they just may not always want the alcohol.
And that’s exactly why we built Nouvie.
Now, we’re heading back to Spain to continue building the next phase of the company and working on our second production order.
This trip is especially meaningful because it represents growth in real time. We’re continuing to refine production, strengthen relationships, and ensure every bottle reflects the quality and experience we want Nouvie to stand for.
From sourcing and production conversations to packaging and long-term expansion plans, this next chapter is about building a brand that can scale while still staying deeply intentional.
As founders, there are moments where you stop and realize the thing you once talked about at your kitchen table is now moving across restaurants, stores, events, and communities.
That feeling never gets old.
We’re incredibly grateful for every restaurant, retailer, event partner, and customer who has supported Nouvie so far. This is still just the beginning, and we’re excited for what’s ahead.
